| Tandoor - Description: |
The path to opening his own restaurant in Lincoln is a "winding history," as Rinzin Wangchuk likes to call it. Not unlike the curves of the clay oven the restaurant is named after.
He came to the United States from his native Bhutan in 1979, and landed in New York City, where he began cooking at an Indian restaurant. In 1984, he moved to Omaha to help open the Indian Oven in the Old Market. A year and a half later, the New York restaurant needed a chef, so he went back. In 1990, Chef Wangchuk returned to Omaha and the Indian Oven and stayed almost a year. Then he moved to Lincoln to work at The Oven in Lincoln's Haymarket. He remained there until he joined Harish Raghani to open the Taj Mahal in south Lincoln in 1995. Three years later, the Tandoor opened its doors.
Used almost exclusively in the Punjab area between India and Pakistan, the tandoor oven is tall and round. They are either placed in the ground or kept above the ground with plaster for insulation. A charcoal fire is built at the bottom of the oven. When the fire dies down it becomes a bed of hot embers.
The Tandoor cuisine emphasizes refined preparation using the the finest, freshest ingredients, perfectly combined with the authentic flavors of India and Bhutan to create a harmony of subtle tastes and bold colors.
Handmade to order, flat breads bake on the wall of the oven while marinated meats are placed on skewers and placed in the center. Savory curry dishes are prepared from scratch with a blend of chili, cumin, coriander and turmeric, along with aromatics like cinnamon, cardamon, cloves and garam masala. Onions, tomatoes, ginger and garlic anchor the flavors of each individually created dish.
Our elegant yet informal dining room offers an ideal place for a business lunch or a relaxed and intimate dining experience in the Williamsburg Village area of south Lincoln.
